How long does Australian Wagyu Tallow last once opened?

Why has my beef tallow gone a black colour in parts?
When fat is rendered it always has some meat attached, that is removed during rendering and melting the fat. A black discolouration can occur when concentrated beef juice is suspended in the tallow and appears following rendering of fat. The black discolouration can also be a result of moisture entering the tallow jar if the lid isn’t on tight. The black discolouration can be removed using a knife and the tallow will be safe to use. The black is not mold or harmful. When tallow keeps its original aromatic smell it remains fine to use. Discolouration can also occur when a knife or spoon is added that has meat or other food from cooking. Simply scrape away any discolouration and continue to use.
